The Bikini Cocktail
Makes enough for 10 people
For the Clementine Syrup (makes 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Premix (makes 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (see above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Method
To prepare the Syrup: Put all the components in a saucepan, bring to a simmer, stirring to dissolve. Next, take off the heat and let it to cool fully. Pour into a sterilised bottle, seal keeping it chilled, it will last for up to a month.
For the Premix: Pour all the liquid ingredients in a sizeable container, let it rest for one hour, then strain best through a fine cloth, making it perfectly clear.
When ready to serve: Add 85ml of the cocktail base into a cocktail shaker packed with ice, and agitate carefully for a minute to cool it down. Pour into a chilled martini glass or a similar vessel, garnish with the cranberries and finish with a light spray with the mandarin essence over the drink.
